Fire Roasted Corn


This is a simple recipe for the only way we eat corn on the cob at our house now.

Get 6-8 ears of corn with the husks on. Peel back most of the husks, forming a handle. Tie the husks together with kitchen twine and pick away the silks. Mix 1 stick of softened butter with some salt, pepper, garlic powder and any other seasonings you'd like (I usually add Emeril's Rib Rub, sometimes basil). Use a basting brusk and cover the corn with the butter mixture. PLace the corn directly onto a hot grill, with the husks sticking out beyond the edge of the grill. Cokk the corn for 12 minutes, turning it 1/4 turn every 3 minutes. Baste the corn every time you turn it. Move the corn around to avoid flame-ups from dripping butter. Serve hot.

Aikido Camp



Alex spent 2 hours a day this week in an introductory Aikido class. This was taught by the same sensei (teacher) that did the demonstration he saw in March. He wore a traditional student uniform called a gi (pronounced "ghee"), pictured above. He learned stranger danger avoidance including breaking a hold if someone tries to grab him. He enjoyed it and the instructor said he did well, so we may consider more classes.

Metroparks Happy Trails 5K


Today I ran my first 5K to benefit the Toledo Metroparks. I've been training for the Race for the Cure in September, but its almost all been on the treadmill. I needed to see how I would fare in an actual race, and this one was about halfway through my training. When I got there I got a timing chip that laced into my shoe that matched my race number which I pinned onto my shirt. The weather has been relatively mild all week, but today it warmed up. The race started at 9 AM so we still missed most of the day's heat. We started to a gunshot and I ran over a special mat that talked to the chip on my shoe and logged in my start time. I was listening to a mix of up tempo songs I had picked out to run to, though I let my iPod pick the order. I ran for one song and then walked for one, which really kept me moving. I started out way too fast and after my first running segment I was blowing hard - I started to doubt that I was going to finish. I backed off on the pace and kept going. I ran/walked my 1st mile in ~14 min, but the next 2 miles went by in about 16 min each. My final time was 47:13 which placed me 20th in my age group. The winner finished in 15:19. I learned a few things about myself which will help me in September. Time to get back on the treadmill - tomorrow.

Jambalaya and Creole Sauce


I enjoy Cajun food, though I was surprised how hard it was for me to find it in Louisiana last October. I guess I had been spoiled by the cookbook Chef Paul Prudhomme's Louisiana Kitchen. My favorite recipes in there are a combo of a Jambalaya recipe and his recommended Creole Sauce. I usually make them together, so I decided to modify his recipes and combine them the way I usually make them. They have some common ingredients and so I do all of the prep work for both recipes ahead of time and put the ingredients into little bowls. Then when it is time to cook, I just line up the bowls and measuring cups and put them into the pot in order. The French call it mise en place and it sure makes cooking large multi-ingredient dishes easier. Some of the ingredients I leave in a big bowl, like the onions, and some I separate out for the 2 dishes, like the seasoning mixes. You can make this less spicy by cutting way back or eliminating the cayenne and even some of the black pepper, as well as the Tabasco sauce. As is, this dish will leave your lips and mouth burning a little - best cooled down with some sweet iced tea. Note the common ingredients in the seasoning mixes that can be divvied up at the same time.

Seasoning Mix #1 (for the Jamabalaya) - Mix together...
2 bay leaves

2 tsp cayenne pepper
1 1/2 tsp salt
2 tsp black pepper
1 tsp dried thyme
1/4 tsp rubbed sage

Seasoning Mix #2 (for the Creole Sauce) - Mix together...
2 bay leaves
1/2 tsp cayenne pepper
1/2 tsp salt
1 tsp black pepper
1/2 tsp dried thyme
3/4 tsp dried oregano
1/2 tsp paprika

1/2 tsp dried basil


Dice 5 celery ribs, 1 large red bell pepper, and 2 medium onions, and place in separate bowls. Get 2 small bowls and put 1 Tbsp of minced garlic into one and 1 1/2 tsp (1/2 Tbsp) of it into the other. Open a 14.5 oz can of diced tomatoes and pour half of it into another dish. Dice a medium tomato and divide it in half between your tomato dish and your tomato can. Open a 15 oz can of tomato sauce and put a little less than 1/2 cup into another dish and save the rest in the can. Measure out 1 1/2 cups of converted rice and set aside. Set aside 1 tsp of sugar and 1/2 tsp of Tabasco sauce (I use the chipotle kind). Divide up a 1 quart container of prepared chicken stock (or broth) by pouring 2 1/2 cups into a measuring cup, leaving the rest in the container. Slice 1/2 pound of smoked sausage in half lengthwise, then sliced the other way into small half-moons. Cut 1 1/2 chicken breasts into bite-sized chunks and put away your utensils and cutting board and wash your hands.

Turn on the oven to 350 degrees. Cook the smoked sausage in 2 Tbsp butter for 3 minutes in a large pot over high heat. Then add the chicken and cook till done - about 4 minutes. Add Seasoning Mix #1 and about 1/3 of your celery, bell pepper, and onion and the large bit of garlic and cook for 6 min, scaping the pot bottom with a wooden spoon. Stir in the 1/2 c. of tomato sauce and cook for 1 min. Stir in another 1/3 of the celery, bell pepper, onions, and one of the tomato dishes. Turn off the heat and add the rice and the measured chicken stock/broth and mix well. Transfer it to a large casserole dish and bake it uncovered for 1 hour.

Rinse any remaining rice out of the pot and melt another 4 Tbsp of butter over medium heat and add the rest of the tomatoes, onions, bell pepper, celery, garlic and Seasoning Mix #2. Saute' for 5 min, then add the rest of the stock/broth and tomato sauce along with the sugar and Tabasco. Bring it to a boil, then let it simmer on low while the jambalaya finishes.

Let the jambalaya rest for 5 min, then serve it in a large bowl, topped with the Creole sauce. Don't forget the sweet tea.

Working on the Front Door




Today I tackled one of the bigger projects on my list while everyone else is gone. I expected to be farther along my list by now, but I took it easy this weekend for my birthday. Today I did some yardwork; trimming, mowing, and cutting away some brush. I found a little bit of poison ivy again this year and I'll remove it soon before it grows too much. Then I took advantage of the mild weather to work on the front door. It is a beautiful but oddly-shaped heavy wooden door, that would cost a lot to replace due to its non-standard shape. It is weathering with some cracks in the door and some worn wood on the threshold. Becky bought some Minwax heavy duty wood filler that I used to fill in the cracks. I'll let it harden and then I'll sand and paint it later this week. The door also has some beautiful metal hardware that used to be black, but the color has all worn off - so I painted that as well. Some of it I had to leave on the door, and some of it I could remove and paint separately. Of course I'll put it back on after I've painted the door.

Take Me Out To The Ballgame





Tonight I went to watch the Toledo Mudhens play the Ottowa Lynx. It was a cool night for June. I got to sit along the 3rd base line in the front row. I was kinda hoping for a foul ball for my birthday. A mom and daughter sitting next to me were celebrating the daughter's birthday there as well. The Lynx pulled ahead early with 3 runs in the 1st inning. We brought it back to a one run game with 2 runs of our own in the bottom of the 1st inning. They stayed ahead until the 5th inning when we went ahead 5 to 4 after loading the bases with 3 bunts in a row! I've never seen a team do that before. It was over after that as they never regained the lead and we won 9 to 4 in 9 innings (OK, 8 1/2).

Carnevale Nights



Tonight I went down to the Levis Commons Shopping Center which is across from my office and attended a fund-raiser for the Toledo Opera - Carnevale Nights. I think it was supposed to be patterned after an Italian Mardi Gras festival. Local vendors sold food, they had live music entertainment, and a gambling tent. For a $25 donation to the Opera, I got $400 worth of chips. I played mostly blackjack, but I got 2 other patrons to join me at the Texas Hold'Em Poker table and finished out my time there. I've watched it played on TV, but I've never played it at a table. It was fun. I enjoy playing against other brains rather than games of chance like roulette or even blackjack. I expected the highlight of the night to be a concert by Jefferson Starship, but I couldn't hear them in the gambling tent and I was having too much fun in there to leave. The biggest treat of the night was finding out that two of my best friends in town, Tom and Sharon, were volunteering in the gambling tent. Sharon gave me my chips and Tom dealt all my blackjack. It was a fun night out on a beautiful late Spring night. I followed it up with Cars. Go see it.

Jason's Physical 2006

I went in for my physical today. It went pretty well. No major surprises. My doctor asked about the things going on in my life, including my new exercise program. We talked about my recent test results. My sugar was normal and my cholesterol was the lowest it had been in years. My HDL was lower than I would have liked, but it tends to improve with exercise, so I expect that it will be better with a little more time. She wants me to recheck it after the Race for the Cure in September to see if we're right. We had decided at my last physical that if I hadn't seen a big improvment in my cholesterol by the time I turned 35, then we would be considering medication. I was pushing the medication at the time. This time I was happy to put that thought on hold for a while. When I weighed in, I was not surprised to find out that I am the heaviest I have ever been. She told me that she'd rather have my BMI up a little bit with me eating healthy and exercising. I got my second and final hepatits A vaccination and was reminded that I'm overdue for the eye doctor. My next visit is in 6 months to talk more about my cholesterol and my weight. I realized at my last birthday, and again at New Year's (resolutions, you know) that I have a lot to live for and I'm going to have to get serious about my health to make sure I see my kids grow up and so I can get to meet their kids. The universe throws us some unexpected curves, so we might as well prepare for the storms we know are coming. And we should mix our metaphors whenever possible.

Dream Dinners



Today, as an early anniversary present toeach other, Becky and I checked out Dream Dinners in Bedford, MI (about 10 minutes from our house in Toledo, OH). We enjoy cooking but sometimes we feel like we don't have time for the menu planning, prep work, and clean up of elaborate meals. We picked out and prepared 6 meals according to the preprinted directions and packaged them up for the freezer. They serve 6 and so the next time we do this, we'll split some of these up into 2 meals of 3 servings each. They took care of the cleanup and had cooking instructions and suggested side dishes printed for all of them. We had a lot of fun doing it together and I expect we'll be back.

Super Butterfly & Power Man



Alex prepared two art pieces for display in the gym/auditorium where we had snacks after the concert. Super Butterfly is fairly self-explanatory, but it should be noted that Power Man has every super power (though, according to Alex, he lacks the power to go really slowly - he says that's not a real super power). The secret is in his power hat. That's probably why he looks so happy.

Alex's Spring Concert 2006



Today we went to Alex's Spring Concert at school. Like his last Winter Concert, he sang with the other kids in the preschool in the Millenium Theater. This year's theme was Outer Space. Alex participated pretty well, though at times you could tell it was hard for him to stand there when other people were singing. He even had a few spoken lines by himself in the song featured above, "Little Bear and Her Friends" (they built a spaceship and flew it to the moon, sort of). Notice the picture of Alex hitting a high note.

Happy Mother's Day 2006



We hope all you mothers out there had a great day! Becky got breakfast in bed made by Jason and Alex, along with some pretty flowers and cards. The boys also got her a gift certificate for a facial at her favorite spa. We topped off the day with dinner at Abuelos's, one of our favorite Mexican restaurants. They were having a busy night, but dinner went well. While we were waiting, the kids watched Dora the Explorer on Daddy's iPod. They were almost disappointed when our table opened up and they had to stop it.

MVCDS Western Round-up Auction




Becky and I went to a fundraiser for Alex's school tonight unlike any we've ever been to. It was an auction that included a silent auction portion and a live auction with some high dollar items, like vacations and a signed McCartney guitar. Becky was on the decorating committee and spent all day working on this event (as well as weeks of planning and borrowing Western-themed items). Becky made some jewelry and her mom crocheted/knitted some blankets and ponchos that raised hundreds of dolloars for the school in the silent auction. We bid high and won a preschool book full of photos and drawings of/by the kids that one of the parents put together in a hardbound coffee table book. Becky and I dressed up in our Western best - I must say that I felt odder in those clothes than an Oklahoma boy should.

Alex has been illustrating stories about Rocket from the Little Einsteins show. The story ideas come from the show, but with Alex's spin on them.
